Method
 

Preparation
  1. In a large mixing bowl, rub together granulated sugar and lemon zest until fragrant and slightly moist.
  2. Incorporate melted vegan butter, whisking until smooth and glossy, about 3 minutes.
  3. Mix in lemon juice and vanilla, whisking until fully combined for about 30 seconds to 1 minute.
  4. In a separate bowl, combine flour, cornstarch, baking powder, salt, and turmeric.
  5. Sift dry ingredients and gently fold into the wet mixture. Stop mixing when no dry flour remains.
  6. Cover the bowl and refrigerate for 60 minutes to help maintain shape.
Baking
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Place powdered sugar in a small bowl for rolling the dough.
  3. Scoop about 1 tablespoon of dough, roll into balls, and coat generously in powdered sugar.
  4. Place cookies on the baking sheet, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes until edges are set and tops are cracked.
  6. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra citrus kick, increase lemon zest slightly. Chilling the dough longer can improve texture.
