Preparation
- In a large mixing bowl, rub together granulated sugar and lemon zest until fragrant and slightly moist.
- Incorporate melted vegan butter, whisking until smooth and glossy, about 3 minutes.
- Mix in lemon juice and vanilla, whisking until fully combined for about 30 seconds to 1 minute.
- In a separate bowl, combine flour, cornstarch, baking powder, salt, and turmeric.
- Sift dry ingredients and gently fold into the wet mixture. Stop mixing when no dry flour remains.
- Cover the bowl and refrigerate for 60 minutes to help maintain shape.
Baking
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Place powdered sugar in a small bowl for rolling the dough.
- Scoop about 1 tablespoon of dough, roll into balls, and coat generously in powdered sugar.
- Place cookies on the baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are set and tops are cracked.
- Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For an extra citrus kick, increase lemon zest slightly. Chilling the dough longer can improve texture.
