Preparation
  1. Preheat the oven to 350°F (180°C) and line an 8x8 baking pan with parchment paper.
  2. In a bowl, combine butter, sugar, and lemon zest, mixing until light and fluffy.
  3. Incorporate the egg and lemon juice into the mixture, blending well.
  4. Stir in the flour and salt until just combined.
  5. Transfer the dough to the prepared pan, smoothing it out evenly.
  6. Sprinkle an additional 2 tablespoons of sugar on top before baking.
  7. Place in the oven and bake for 18-25 minutes, until the edges are golden brown and the middle is soft.
