Preparation
- Preheat the oven to 400 degrees F and spray a 13x9 baking dish with non-stick cooking spray.
- In a microwave-safe bowl, warm the refried beans for about a minute and stir in taco seasoning, garlic powder, salt, and pepper.
- Spread the bean mixture in an even layer on the bottom of the baking dish.
- Place the frozen taquitos on top of the bean layer.
- Pour the enchilada sauce over the taquitos to cover them completely.
Baking
- Bake for 15-20 minutes in the oven.
- Remove from the oven and top with shredded cheese.
- Bake for an additional 5 minutes, or until the cheese is melted.
Serving
- Serve with sour cream, guacamole, and fresh chopped cilantro.
