Method
 

Preparation
  1. Preheat the oven to 400 degrees F and spray a 13x9 baking dish with non-stick cooking spray.
  2. In a microwave-safe bowl, warm the refried beans for about a minute and stir in taco seasoning, garlic powder, salt, and pepper.
  3. Spread the bean mixture in an even layer on the bottom of the baking dish.
  4. Place the frozen taquitos on top of the bean layer.
  5. Pour the enchilada sauce over the taquitos to cover them completely.
Baking
  1. Bake for 15-20 minutes in the oven.
  2. Remove from the oven and top with shredded cheese.
  3. Bake for an additional 5 minutes, or until the cheese is melted.
Serving
  1. Serve with sour cream, guacamole, and fresh chopped cilantro.

Notes

This recipe is highly adaptable! For a vegetarian version, replace the taquitos with veggie-based options or black bean taquitos. Consider using fresh or homemade enchilada sauce for an elevated flavor.
