Method
 

Preparation
  1. In a mixing bowl, combine the unsalted butter, vanilla extract, stevia glycerite, whole milk, and one large egg. Whisk until smooth.
  2. Mix in the coconut flour, cinnamon, and baking powder until the batter is well combined.
Cooking
  1. On medium heat, melt one tablespoon of unsalted butter in a frying pan until sizzling.
  2. Pour the batter into the hot pan, cooking until golden brown on one side, about 3-4 minutes, then flip and cook for another 3-4 minutes.
Serving
  1. Remove from the pan and serve with your favorite low-carb toppings or sides.

Notes

Let the batter sit for a few minutes before cooking to allow the coconut flour to hydrate. Serve with fresh berries or sugar-free syrup for added flavor.
