Preparation
- Preheat the oven to 400°F and lightly grease a 9-inch baking dish.
- In a large bowl, whisk together eggs, heavy cream, salt, pepper, garlic powder, and red pepper flakes.
- Fold in ½ cup of shredded cheddar cheese and set the mixture aside.
- In a large skillet over medium-high heat, cook the raw sausage for 5-7 minutes until browned.
- Add the spinach to the skillet and mix until slightly wilted.
- Transfer the sausage and spinach mixture into the greased baking dish.
- Pour the egg mixture over the sausage and gently stir if needed.
- Sprinkle the remaining shredded cheddar cheese on top.
Baking
- Place the casserole in the oven and bake for around 25 minutes until eggs are set and cheese is golden brown.
- Allow the casserole to rest for 10 minutes before cutting into squares and serving.
Notes
Add vegetables like bell peppers for extra nutrition or use freshly grated cheese for creamier texture. Can be prepared the night before and stored in the fridge.
