Ingredients

Main Ingredients
  • 4 pieces boneless skinless chicken breasts The main protein source, tender and juicy when cooked properly.
  • 2 tablespoons olive oil Adds moisture and richness, enhancing flavor.
  • 1/4 cup reduced-sodium soy sauce Provides a savory umami taste while keeping sodium levels in check.
  • 1 teaspoon garlic powder Infuses the chicken with aromatic depth.
  • 1/2 teaspoon black pepper Adds a mild kick and enhances overall flavor.

Method

Preparation
  1. Prepare the chicken. Cut three shallow slits across the top of each chicken breast to help the marinade better penetrate the meat.
  2. Make the marinade. Combine the olive oil, soy sauce, garlic powder, and black pepper in a small bowl.
  3. Apply the marinade. Divide the mixture between two small bowls. Use one of them and a pastry brush to brush the chicken breasts on both sides with the marinade.
Cooking
  1. Heat the grill. Heat a dual-contact electric grill or a grill pan on medium-high heat and lightly grease the grill.
  2. Grill the chicken. Grill the chicken breasts until cooked through and no longer pink, flipping them midway through cooking. Medium (8-ounce) chicken breasts should take about 6 minutes on a dual-contact grill or 6 minutes per side in a grill pan.
Serving
  1. Rest the chicken. Transfer the chicken pieces to a sheet of foil and use a clean pastry brush to coat them with the unused portion of the marinade.
  2. Cover and rest. Loosely cover the chicken breasts with foil and let them rest for 5-10 minutes before slicing and serving.

Notes

Marinate for at least 30 minutes to deepen flavor. Use a meat thermometer; aim for an internal temperature of 165°F for safety. Resting helps retain moisture.
