Preparation
- Heat the oil. Turn Instant Pot to Sauté mode and heat oil.
- Sauté aromatics. Add onion, garlic, and ginger, and sauté for a few minutes until onion is golden brown.
- Prepare the base. Turn off the Instant Pot. Add tomatoes, yogurt, cilantro, red chili flakes, cumin powder, coriander powder, garam masala, salt, and water, then use a hand-held blender to puree everything.
- Add the beef. Add meat and mix until coated with the sauce.
- Seal the pot. Put the lid on and turn up the valve to “Sealing.”
- Pressure cook. Select 'Manual' mode and set the timer for 20 minutes.
- Release pressure. When the cook time is over, let the pressure release naturally for 15 minutes.
- Stir the curry. Remove the lid and stir the curry.
- Thicken the sauce. Cook uncovered on 'Sauté' mode for a little longer to reduce the liquid and thicken the curry.
- Garnish and serve. Garnish with cilantro and enjoy!
Notes
For best results, use fresh spices, brown the meat beforehand for extra flavor, and feel free to customize with additional vegetables. Serve with rice or naan for a complete meal.
