Method
 

Preparation
  1. Season the chicken thighs with Italian seasoning, salt, and pepper.
Cooking
  1. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil.
  2. Sear the chicken thighs until golden on both sides, then set aside.
  3. In the same pan, add the remaining olive oil and sauté the onion and bell peppers for 3-4 minutes.
  4. Add garlic and crushed red pepper flakes, cooking for 1 more minute.
  5. Stir in balsamic vinegar and a splash of water to deglaze the pan.
  6. Add diced tomatoes, thyme, oregano, and basil; bring to a boil.
  7. Reduce heat and add the seared chicken thighs, simmering for 15-20 minutes until fully cooked.
  8. Garnish with fresh basil or parsley and serve warm over cooked spaghetti.

Notes

This dish can be meal prepped and reheated easily. It pairs well with crusty bread or a simple side salad.
