  • 1 lb small or mini carrots Fresh and vibrant, these provide natural sweetness and a satisfying crunch.
  • 1 tsp sea salt Essential for seasoning.
  • 1 tsp fresh ground black pepper Enhances the flavors of the dish.
  • 1 tbsp Arrowroot powder Helps to create a crispy texture on the outside.
  • 2 tbsp raw honey or pure maple syrup Adds sweetness to counterbalance the heat.
  • 2 tbsp grass-fed butter Provides richness and depth of flavor.
  • 1 tbsp hot sauce Introduces a spicy kick.
  • 2 tbsp fresh Italian parsley A garnish that adds color and freshness.

Method
 

Preparation
  1. Preheat the oven to 425 degrees F.
  2. Peel the carrots and slice them in half if they are thick, keeping smaller ones whole.
  3. Place the prepared carrots into a large parchment paper lined sheet pan or baking dish.
  4. Sprinkle with sea salt, pepper to taste, and Arrowroot powder, tossing to coat well.
  5. Drizzle the carrots with honey, melted butter, and hot sauce.
  6. Use your clean hands or tongs to toss very well, ensuring the carrots are nicely coated.
  7. Arrange the carrots in a single layer on the baking sheet.
  8. Roast for about 15-20 minutes, or until fork-tender and beginning to caramelize.
  9. Remove from the oven, garnish with chopped parsley, and enjoy while hot!

Notes

For extra caramelization, turn on the broiler during the last few minutes. Use different colored carrots for a visually stunning side dish. Peeling the carrots enhances flavor and texture.
