Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry and place them in a baking dish.
- In a small bowl, mix honey and BBQ sauce together then pour it over the chicken, coating evenly.
Cooking
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- While the chicken is baking, wash, peel, and dice the potatoes into small cubes.
- In a pot, boil the diced potatoes in salted water for 15-20 minutes, or until fork-tender.
- Drain the potatoes, then add minced garlic, grated Parmesan, olive oil, salt, and pepper to taste. Mash until creamy.
- Once the chicken is done, serve with the creamy garlic Parmesan potatoes on the side.
Notes
For best results, marinate the chicken before cooking. Use varied potatoes for different textures, and consider adding a splash of lemon juice for brightness. Store leftovers in an airtight container for up to 3 days in the fridge.
