Preparation
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and mix until well combined.
- In another bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
- Fold in the chopped fresh strawberries gently with a spatula.
- Pour the batter into the prepared cake pan, smoothing the top.
Baking
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, use fresh strawberries and be sure not to overmix the batter. This cake can be served with whipped cream or vanilla ice cream, with a sprinkle of powdered sugar for garnish.
