Preparation
  1. Start by placing the eggs, mustard, and salt in a mixing bowl or the container of an immersion blender.
  2. Using a hand whisk or immersion blender, blend the mixture until smooth.
  3. Begin to drizzle in the oil slowly while blending constantly to help emulsify the mayonnaise.
  4. Keep blending until all the oil is combined and the mixture is thick and creamy.
  5. Finally, add the vinegar or lemon juice and blend for a few more seconds to incorporate.

Notes

Homemade mayonnaise is perfect for meal prep and can be stored for up to a week in the refrigerator. Can experiment with different types of vinegar or lemon juice for flavor variations.
