  • 1/4 cup light brown sugar Contributes rich, caramel-like notes.
  • 2 tablespoons salted butter Enhances flavor depth and creaminess.
  • 1/4 teaspoon fine sea salt Balances sweetness and amplifies flavors.
  • 1 tablespoon espresso powder Intensifies the richness of the chocolate flavor.
  • 4 ounces bittersweet chocolate Essential for creating a deep chocolate base.
  • 1/4 cup Dutch process cocoa powder For a smooth, rich chocolate depth.
  • 1 teaspoon vanilla extract Adds a warm aroma and rounds out the flavors.

Method
 

Preparation
  1. In a small saucepan, combine heavy cream, granulated sugar, light brown sugar, salted butter, sea salt, and espresso powder.
Cooking
  1. Bring to a simmer over medium-low heat and simmer for 45 seconds.
  2. Add bittersweet chocolate and whisk until melted.
  3. Remove from heat and sift in cocoa powder, whisking until smooth.
  4. Return to low heat, whisking constantly until glossy.
  5. Remove from heat and whisk in vanilla extract.
  6. Cool for at least 1 hour, whisking occasionally.

Notes

Store the sauce in an airtight container in the fridge for up to two weeks. It can also be frozen for up to two months.
