- In a large pot, heat some oil over medium heat. Add diced chicken breasts and cook until browned, about 5-7 minutes. Remove the chicken and set aside.
- In the same pot, add diced onions, carrots, and celery. Sauté for 4-5 minutes until softened. Add minced garlic and cook for an additional minute.
- Return the chicken to the pot. Pour in chicken broth and heavy cream. Season with salt and pepper to taste. Bring to a gentle simmer.
Cooking Dumplings
- In a mixing bowl, combine flour, baking powder, and salt. Stir in melted butter and milk until just combined.
- Drop spoonfuls of the dumpling mixture into the simmering broth. Cover the pot and cook for 12-15 minutes until the dumplings are fluffy and cooked through.
Serving
- Gently stir the chicken and dumplings together. Adjust seasoning and serve hot.
Notes
Store leftovers in airtight containers in the refrigerator for 3-4 days or freeze in single servings for up to 3 months. Reheat gently on the stovetop.
