Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the medium potatoes.
  3. Chop the medium onion and mince the garlic cloves.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Brown the ground beef until no longer pink, about 6-8 minutes. Add onion and garlic, cooking until softened, around 3 minutes.
  6. Season with Italian seasoning, salt, and pepper to taste.
Cooking and Assembly
  1. In a baking dish, layer half of the sliced potatoes at the bottom.
  2. Evenly spread the beef mixture over the potato layer.
  3. Top with the remaining potato slices.
  4. Pour ½ cup of beef broth over the entire dish.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil, sprinkle cheddar and Parmesan cheese on top, and return to the oven.
  7. Bake uncovered for another 15-20 minutes or until golden brown and bubbly.
Serving
  1. Once cooked, remove the casserole from the oven and let it cool for 5 minutes.
  2. Serve warm, portioning into bowls or plates.
  3. Pair with a salad or steamed vegetables for a balanced meal.

Notes

For the best results, use lean ground beef and slice potatoes thinly. This dish is meal prep friendly and can be stored in an airtight container for up to 3 days in the fridge.
