Preparation
- Preheat the oven to 425°F (220°C).
- Line a round pizza pan with parchment paper and drizzle with olive oil.
- In a large mixing bowl, combine self-raising flour and fine kosher salt.
- Add Greek yogurt and mix until it forms a crumbly dough.
- Knead the dough on a floured surface for about 2 minutes until elastic.
- Roll out the dough into a 12-14 inch circle, slightly thickening the edges.
- Transfer the dough to the lined baking sheet and pre-bake for 8 minutes.
Cooking
- In a bowl, mix together ricotta, chopped spinach, garlic, salt, and lemon zest.
- Spread the ricotta mixture over the pre-baked dough.
- Top with mozzarella, Parmesan, black pepper, and optional red pepper flakes.
- Drizzle with olive oil if desired.
- Bake for an additional 6-8 minutes until cheese is melted and golden.
Serving
- Allow the pizza to cool slightly, then slice and serve.
