Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Line a round pizza pan with parchment paper and drizzle with olive oil.
  3. In a large mixing bowl, combine self-raising flour and fine kosher salt.
  4. Add Greek yogurt and mix until it forms a crumbly dough.
  5. Knead the dough on a floured surface for about 2 minutes until elastic.
  6. Roll out the dough into a 12-14 inch circle, slightly thickening the edges.
  7. Transfer the dough to the lined baking sheet and pre-bake for 8 minutes.
Cooking
  1. In a bowl, mix together ricotta, chopped spinach, garlic, salt, and lemon zest.
  2. Spread the ricotta mixture over the pre-baked dough.
  3. Top with mozzarella, Parmesan, black pepper, and optional red pepper flakes.
  4. Drizzle with olive oil if desired.
  5. Bake for an additional 6-8 minutes until cheese is melted and golden.
Serving
