Ingredients

Dry Ingredients
  • 2 cups almond flour A gluten-free base that adds moisture and nutty flavor.
  • 1 scoop vanilla whey protein powder Increases protein content while enhancing sweetness.
  • 1/2 cup coconut sugar Provides natural sweetness with a hint of caramel flavor.
  • 1 teaspoon cinnamon Adds warmth and depth to the flavor profile.
  • 1 teaspoon baking soda Acts as a leavening agent, helping the bread rise.
  • 1/2 teaspoon salt Balances flavors and enhances sweetness.
Wet Ingredients
  • 1/2 cup coconut oil Gives moisture and richness to the loaf.
  • 2 large eggs Binds ingredients and adds structure for a fluffy texture.
  • 2 teaspoons vanilla Boosts overall flavor with a warm aroma.
  • 3 medium mashed bananas Creates natural sweetness and moisture, essential for banana bread.

Method

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Line a 9-inch loaf pan with parchment paper and rub the sides with coconut oil to prevent sticking.
  3. In a medium bowl, whisk together the almond flour, protein powder, coconut sugar, cinnamon, baking soda, and salt.
Cooking
  1. In a large bowl, whisk the melted coconut oil, eggs, and vanilla until well combined.
  2. Incorporate the mashed bananas into the wet mixture and whisk until combined.
  3. Gradually add the dry ingredients to the wet mixture and whisk until just combined, careful not to overmix.
  4. Pour the batter into the prepared loaf pan and bake for 55 minutes to 1 hour, until dark-brown and a toothpick inserted in the center comes out clean.
Serving
  1. Allow the bread to cool in the pan completely before slicing and serving.

Notes

Add chopped nuts or dark chocolate chips for extra texture and flavor. Make sure the bananas are fully ripe for maximum sweetness. Let the bread cool completely before slicing for cleaner cuts.
