Ingredients

Fresh Ingredients
  • 2 pounds mixed heirloom tomatoes Use the ripest and most colorful tomatoes available for the best flavor.
  • 8 ounces burrata or mozzarella Fresh varieties deliver a creamy taste; if unavailable, regular mozzarella can suffice.
  • 1 handful fresh basil leaves Look for bright, fragrant leaves; they elevate the salad significantly.
  • 3 tablespoons extra-virgin olive oil A high-quality oil intensifies flavor; consider a flavored oil for an extra kick.
  • 1/2 teaspoon flaky sea salt Enhances all flavors; adjust to your preference.
  • freshly ground black pepper To taste; a little spice balances out the creaminess of the cheese.

Method

Preparation
  1. Using a serrated knife, cut the tomatoes into 1/4 inch thick slices. Arrange them elegantly on a large serving platter, overlapping their edges. Vary the shapes for a visual feast.
  2. Cut the burrata or mozzarella into 1/4 inch to 1/2 inch slices. Disperse these creamy slices around and underneath the tomatoes.
  3. Sprinkle the fresh basil leaves all over the assembled tomatoes and cheese.
  4. Generously drizzle the extra-virgin olive oil over the salad.
  5. Finish by sprinkling generously with flaky sea salt and freshly ground black pepper.
  6. Allow the salad to rest for 30 minutes before serving to help meld the flavors.
