Method
 

Preparation
  1. Preheat the oven to 375°F and lightly grease a baking dish with nonstick spray.
  2. If using fresh strawberries, pat them dry after washing; if using frozen, use them straight from the bag.
Mixing
  1. In a large bowl, combine strawberries, coconut sugar, lemon juice, lemon zest, vanilla extract, and cornstarch until coated. Spoon into the greased baking dish.
  2. In another bowl, stir together oats, oat flour, walnuts, coconut sugar, salt, and cinnamon. Add melted coconut oil, maple syrup, and vanilla extract, mixing until clumps form.
Assembling and Baking
  1. Spread the crumble topping evenly over the strawberries without pressing it down.
  2. Bake for 32-42 minutes until the crumble is golden and the filling bubbles at the edges.
  3. Let it rest for 10-15 minutes to set, then serve warm.
