Preparation
- Mix the custard by beating eggs, milk, pumpkin puree, maple syrup, vanilla, pumpkin spice, and sea salt together until smooth in a shallow pie plate.
Cooking
- Preheat a skillet over medium heat, and drizzle with a bit of coconut oil or butter.
- Dip both sides of a slice of bread into the pumpkin-egg mixture, allowing excess to drip back. Place it in the heated skillet.
- Cook the toast for 2 minutes per side, or until golden-brown and cooked through the center. Repeat with remaining slices.
Serving
- Serve hot with fresh berries if desired and drizzled with maple syrup.
Notes
For the best results, allow the bread to soak longer in the custard and cook in smaller batches to maintain the texture.
