Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  2. Pat peaches dry, then peel and cut into ¾-inch slices. Place in a large mixing bowl.
  3. Add coconut sugar, lemon juice, vanilla extract, and cornstarch to the peaches and toss until coated. Transfer to the baking dish.
  4. In a separate bowl, combine oats, oat flour, coconut sugar, salt, and cinnamon. Add maple syrup, melted coconut oil, and vanilla. Mix until a crumbly texture is achieved.
  5. Evenly sprinkle the crumble topping over the peach filling.
Baking
  1. Place in the oven and bake for 30–38 minutes, until the topping is golden and the peaches are bubbling.
  2. Let cool for 10–15 minutes before serving to allow the filling to set.

Notes
