Preparation
- Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
- Pat peaches dry, then peel and cut into ¾-inch slices. Place in a large mixing bowl.
- Add coconut sugar, lemon juice, vanilla extract, and cornstarch to the peaches and toss until coated. Transfer to the baking dish.
- In a separate bowl, combine oats, oat flour, coconut sugar, salt, and cinnamon. Add maple syrup, melted coconut oil, and vanilla. Mix until a crumbly texture is achieved.
- Evenly sprinkle the crumble topping over the peach filling.
Baking
- Place in the oven and bake for 30–38 minutes, until the topping is golden and the peaches are bubbling.
- Let cool for 10–15 minutes before serving to allow the filling to set.
Notes
For a flavor boost, consider adding a splash of almond extract along with the vanilla. You can also incorporate a mix of nuts into the crumble for added texture and flavor. Serve warm over a scoop of vanilla ice cream or yogurt for an elevated dessert experience.
