Preparation
- Preheat the oven to 375°F and lightly grease a 9×9-inch baking dish.
- Pat the peaches dry, then peel them using a peeler or the boiling method for softer peaches. Skip if using super ripe peaches!
- Cut the peaches into ¾-inch slices and add them to a large mixing bowl.
- Add the coconut sugar, lemon juice, vanilla extract, and cornstarch to the peaches. Toss until fully coated, then transfer to the greased baking dish.
Making the Crumble
- In a separate bowl, mix oats, oat flour, coconut sugar, salt, and cinnamon.
- Add maple syrup, melted coconut oil, and vanilla. Mix until crumbly.
Assembly and Baking
- Evenly sprinkle the crumble topping over the peach filling.
- Bake for 30–38 minutes until the topping is golden and the peaches are bubbling.
- Let cool for 10–15 minutes before serving to allow the filling to set.
Notes
Serve warm with a scoop of vanilla ice cream for an indulgent treat. You can also add spices like nutmeg or ginger for added warmth, or incorporate different nuts for additional flavors and textures.
