Method
 

Preparation
  1. Preheat the oven to 375°F and lightly grease a 9×9-inch baking dish.
  2. Pat the peaches dry, then peel them using a peeler or the boiling method for softer peaches. Skip if using super ripe peaches!
  3. Cut the peaches into ¾-inch slices and add them to a large mixing bowl.
  4. Add the coconut sugar, lemon juice, vanilla extract, and cornstarch to the peaches. Toss until fully coated, then transfer to the greased baking dish.
Making the Crumble
  1. In a separate bowl, mix oats, oat flour, coconut sugar, salt, and cinnamon.
  2. Add maple syrup, melted coconut oil, and vanilla. Mix until crumbly.
Assembly and Baking
  1. Evenly sprinkle the crumble topping over the peach filling.
  2. Bake for 30–38 minutes until the topping is golden and the peaches are bubbling.
  3. Let cool for 10–15 minutes before serving to allow the filling to set.
