  • 1 tablespoon cornstarch Thickens the berry mixture.
For the Topping
  • 1 cup old-fashioned rolled oats Forms the crunchy topping.
  • 1/2 cup oat flour Adds nutty flavor.
  • 1/2 cup walnuts Chopped; can substitute with other nuts.
  • 1/4 cup coconut sugar For sweetness in the topping.
  • 1/4 teaspoon salt Enhances flavors.
  • 1/4 cup melted coconut oil For binding the topping.
  • 1/4 cup real maple syrup Adds natural sweetness.
  • 1 teaspoon pure vanilla extract Infuses flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Zest the orange and set the zest aside.
Make the Filling
  1. In a large bowl, toss the mixed berries with orange juice, coconut sugar, cornstarch, and orange zest.
  2. Pour the berry mixture into the greased pan.
Prepare the Topping
  1. In another bowl, combine oats, oat flour, chopped walnuts, coconut sugar, and salt.
  2. Add maple syrup, melted coconut oil, and vanilla extract. Mix until it clumps together.
Assemble and Bake
  1. Sprinkle the topping evenly over the berries.
  2. Bake for 32 to 42 minutes, until the top is golden and the berries are bubbly.
  3. Cool for 10 to 15 minutes before serving.

Notes

This crumble can be served warm or at room temperature and pairs beautifully with vanilla ice cream.
