  • 1 cup old-fashioned rolled oats Provides a wholesome, chewy texture.
  • 1/2 cup oat flour Adds light and fluffy texture to the crumble topping.
  • 1/2 cup walnuts (chopped) Adds crunch and healthy fats; can substitute with almonds or pecans.
  • 1/4 tsp salt Enhances flavors and balances sweetness.
  • 1/4 cup melted coconut oil Binds the topping and adds richness; butter can be used as an alternative.
  • 1/4 cup real maple syrup Natural sweetener that complements the oats beautifully.
  • 1 tsp pure vanilla extract Enhances overall flavor with warmth.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Zest the orange and set aside.
Make the filling
  1. In a large bowl, toss mixed berries with fresh orange juice, coconut sugar, cornstarch, and orange zest.
  2. Pour the berry mixture into the greased baking pan.
Make the topping
  1. In a separate bowl, combine oats, oat flour, chopped walnuts, coconut sugar, and salt.
  2. Add maple syrup, melted coconut oil, and vanilla extract. Mix until it clumps and resembles wet sand.
Assemble and Bake
  1. Evenly sprinkle the topping over the berry mixture in the baking pan.
  2. Bake for 32 to 42 minutes until the topping is golden and the berry filling is bubbly.
  3. Allow to cool for 10 to 15 minutes before serving.

Notes

Serve warm with vanilla ice cream or yogurt for added creaminess. Store leftovers in an airtight container in the fridge for up to three days. Can be frozen for up to three months.
