Crumble Topping
  • 1/4 cup almond flour Used for topping.
  • 2 tablespoons coconut oil Melted for topping.
  • 2 tablespoons coconut sugar Used to sweeten the crumble.

Method
 

Preparation
  1. Preheat your oven to 350°F and lightly grease, then line an 8” x 8” baking tin with parchment paper.
  2. Zest your lemon and set it to the side.
Mix Wet Ingredients
  1. In a large mixing bowl, whisk together the eggs, yogurt, maple syrup, melted coconut oil, fresh lemon juice, and vanilla extract until smooth.
Combine Dry Ingredients
  1. Add in the almond flour, coconut flour, poppy seeds, baking powder, baking soda, and salt to the wet mixture.
Add Lemon Zest and Pour into Tin
  1. Gently hand fold in lemon zest and pour the batter into the lined baking tin.
Prepare Crumble Topping
  1. In a small bowl, combine all the crumble topping ingredients and evenly sprinkle on top of the batter.
Bake the Cake
  1. Bake for 38-42 minutes, or until a toothpick comes out clean.
