Preparation
- Preheat oven to 375°F (190°C).
- Line a muffin tin with paper liners and spray them with nonstick cooking spray.
- In a large bowl, whisk together dry ingredients: flour, baking powder, cinnamon, baking soda, salt, nutmeg, and cloves.
- In a medium bowl, whisk together wet ingredients: applesauce, Greek yogurt, maple syrup, oil, eggs, and vanilla extract.
Cooking
- Add wet ingredients to dry ingredients and stir until just combined.
- Gently fold in the grated apple.
- Divide the batter among the muffin cups, filling them to the top.
- Sprinkle the tops with turbinado sugar.
- Bake for 18 to 24 minutes until golden brown and a toothpick inserted comes out clean.
Serving
- Let the muffins cool in the pan for 5 minutes.
- Remove muffins from the tin and let cool for another 15 minutes.
- Enjoy fresh or store in an airtight container.
Notes
These muffins can be frozen for up to 3 months. Best served warm or at room temperature.
