Preparation
- Brown the ground beef. Heat a large Dutch oven over medium-high heat. Add ground beef, salt, and pepper; brown the meat for about 5 minutes, breaking it apart. Transfer to a paper towel-lined plate and set aside.
- Cook the vegetables. Reduce heat to medium and add olive oil. Once hot, add onion, green and red bell peppers, and sweet potato; cook for 10-15 minutes until softened and golden brown.
Cooking
- Add garlic and spices. Add garlic, chili powder, cumin, chipotle chili powder, oregano, cayenne, and cinnamon; cook for 1 minute until fragrant.
- Simmer with broth. Add beef broth, scraping up any browned bits, and let simmer for 3 minutes.
- Add remaining ingredients. Stir in diced tomatoes, kidney beans, black beans, and reserved ground beef.
- Thicken the chili. Reduce heat to medium-low, partially cover, and simmer for about 1 hour to 1 hour 15 minutes until thickened.
Serving
- Finish and serve. Stir in sugar, adjust seasoning to taste, and serve hot with desired toppings.
- Store leftovers. Store leftovers in an airtight container for up to 4 days; reheat on stovetop or microwave. Freeze for up to 3 months.
Notes
For deeper flavor, consider browning the beef more until it’s nicely caramelized. Add a splash of apple cider vinegar before serving to brighten the flavors. Use fresh herbs like cilantro or parsley as a garnish for a fresh touch.
