Method

Preparation
  1. Preheat oven to 375°F. Boil water for pasta and add 3/4 tablespoon salt once boiling.
  2. Combine the marinara sauce ingredients and set aside. Measure out the remaining ingredients.
Cooking
  1. Season ground beef with salt and pepper, heat a skillet over medium-high, and cook beef for 3 minutes.
  2. Add onions and garlic, cooking until softened (5-6 minutes). Drain grease.
  3. Stir in the tomato paste, cooking for 1-2 minutes. Add beef broth and reduce liquid by half (3-4 minutes). Combine with marinara sauce.
  4. Bring to a gentle boil, then simmer uncovered while boiling pasta to al dente. Sprinkle in Parmesan and 1/4 cup mozzarella, stirring continuously.
Assembly and Baking
  1. Drain the pasta, add it to the sauce, and toss. Transfer to a greased 9 x 13-inch casserole dish and top with remaining mozzarella.
  2. Bake uncovered for 10 minutes. Broil at 450°F for 1-2 minutes until brown, watching carefully.
  3. Garnish with parsley and let stand for 5 minutes before serving.

Notes

For best results, cook pasta just until al dente; it will continue to cook when baked. You can add pre-cooked vegetables for added nutrition.
