Preparation
- Preheat the grill or a pan until it is hot enough for grilling.
- Slice thick slices of firm, ripe tomatoes to ensure they grill well.
Grilling
- Place the tomato slices on the grill or hot pan, cooking each side for about 3-4 minutes until grill marks appear.
- Carefully remove the grilled tomatoes to a clean plate once cooked.
Assembly
- Place a slice of fresh mozzarella on each grilled tomato slice immediately.
- Drizzle a generous amount of olive oil over the tomatoes and mozzarella.
- Sprinkle the grilled tomatoes with chopped basil, oregano, and salt to taste.
- Serve immediately while they are warm and the cheese is deliciously melted.
Notes
Select the ripest tomatoes for maximum flavor. Avoid overripe tomatoes which may fall apart while grilling. Serve with crusty bread or a salad.
