Method
 

Preparation
  1. Preheat the grill to high heat, cleaning the grates and lightly oiling them.
Cooking
  1. Grill the corn cobs, turning occasionally for about 10 minutes or until charred and cooked through.
Assembly
  1. Once cooled, cut the corn off the cob and place the kernels in a large mixing bowl.
  2. Add diced tomatoes, minced garlic, bell pepper, diced avocado, jalapeño, cilantro, lime juice, sea salt, and pepper; gently toss to combine.
  3. If desired, crumble feta cheese on top before serving.

Notes

This salsa can be prepared in advance. Serve chilled to enhance its refreshing qualities. Optional additions include black beans or diced mango for a sweet twist.
