For the Tacos

  • 1 cup Sour cream Base for the creamy sauce.

  • 4 pieces Flour tortillas For holding fillings.
  • 1 cup Iceberg lettuce For crunch.

Method
 

Preparation
  1. Make the marinade: In a large bowl, whisk together all the marinade ingredients. Add the shrimp and toss to coat. Set aside for 15 minutes.
  2. Prepare the sauce: In a medium bowl, add all the Southwest Sauce ingredients; whisk until well blended. Set aside.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Brush the corn lightly with melted butter and grill until grill marks form, approximately 10-12 minutes. Remove from grill, cool slightly, and cut the corn off the cob. Set aside.
  3. After marinating, remove shrimp from the marinade and place on wooden skewers. Discard the marinade.
  4. Grill the shrimp for 2-3 minutes per side or until they are fully cooked.
Serving
  1. Assemble the tacos: Place grilled shrimp into flour tortillas, top with shredded lettuce, sliced avocado, grilled corn, and chopped cilantro. Finish with Southwest Sauce and an extra dash of lime juice.

Notes

Marinate the shrimp longer for deeper flavor absorption. Keep toppings prepared ahead of time for a smoother cooking process.
