Preparation
- Preheat your grill to medium-high heat (about 375°F or 190°C).
- Pat the whole chicken dry with paper towels.
- In a bowl, mix olive oil, minced garlic, chopped fresh herbs, salt, and pepper. Rub this mixture all over the chicken.
- Stuff the cavity of the chicken with lemon halves and additional herbs.
Cooking
- Place the chicken on the grill, breast side down. Cook for about 20 minutes.
- After 20 minutes, flip the chicken over and continue grilling for an additional 30-40 minutes, until the internal temperature reaches 165°F (75°C).
- Once done, remove the chicken from the grill and let it rest for 10 minutes before carving.
Notes
For an extra flavor boost, marinate the chicken overnight. Use an instant-read thermometer to check the internal temperature accurately. If you prefer a smokier flavor, add wood chips to the grill. Don’t skip the resting time; it helps the juices redistribute for a more tender bite.
