Method
 

Preparation
  1. Preheat your grill to medium-high heat (about 375°F or 190°C).
  2. Pat the whole chicken dry with paper towels.
  3. In a bowl, mix olive oil, minced garlic, chopped fresh herbs, salt, and pepper. Rub this mixture all over the chicken.
  4. Stuff the cavity of the chicken with lemon halves and additional herbs.
Cooking
  1. Place the chicken on the grill, breast side down. Cook for about 20 minutes.
  2. After 20 minutes, flip the chicken over and continue grilling for an additional 30-40 minutes, until the internal temperature reaches 165°F (75°C).
  3. Once done, remove the chicken from the grill and let it rest for 10 minutes before carving.

Notes

For an extra flavor boost, marinate the chicken overnight. Use an instant-read thermometer to check the internal temperature accurately. If you prefer a smokier flavor, add wood chips to the grill. Don’t skip the resting time; it helps the juices redistribute for a more tender bite.
