For the Chicken and Pineapple
  • 4 pieces chicken breasts Foundation of the dish, providing protein and texture.
  • 1 can pineapple rings Add sweetness and a tropical touch to the dish.

Method
 

Preparation
  1. In a large bowl, mix the marinade ingredients along with the reserved pineapple juice until the sugar dissolves.
  2. Reserve 1/2 cup of the marinade for later use and add the rest to a Ziploc bag with the chicken breasts. Seal the bag after pushing out the air and refrigerate for at least 30 minutes, preferably overnight.
Grilling
  1. Preheat the grill to 350°F and oil the grill grates to prevent sticking.
  2. Remove the chicken from the marinade, shake off excess liquid, and grill for 5 to 8 minutes per side, brushing several times with the reserved marinade.
  3. Check for doneness; chicken is done when the internal temperature reaches 165°F.
  4. Place the pineapple rings on the grill and cook until charred.
  5. Plate the chicken and top it with the grilled pineapple slices.

Notes

Letting the chicken marinate overnight will enhance flavor and tenderness. Use a meat thermometer to avoid overcooking and ensure safety. Brush chicken with additional marinade while grilling for extra moisture and flavor.
