Preparation
- In a large bowl, mix the marinade ingredients along with the reserved pineapple juice until the sugar dissolves.
- Reserve 1/2 cup of the marinade for later use and add the rest to a Ziploc bag with the chicken breasts. Seal the bag after pushing out the air and refrigerate for at least 30 minutes, preferably overnight.
Grilling
- Preheat the grill to 350°F and oil the grill grates to prevent sticking.
- Remove the chicken from the marinade, shake off excess liquid, and grill for 5 to 8 minutes per side, brushing several times with the reserved marinade.
- Check for doneness; chicken is done when the internal temperature reaches 165°F.
- Place the pineapple rings on the grill and cook until charred.
- Plate the chicken and top it with the grilled pineapple slices.
Notes
Letting the chicken marinate overnight will enhance flavor and tenderness. Use a meat thermometer to avoid overcooking and ensure safety. Brush chicken with additional marinade while grilling for extra moisture and flavor.
