Method
 

Preparation
  1. Gather all ingredients—place them on a clean kitchen counter.
  2. Wash your mixed greens thoroughly; spin dry to remove excess water.
  3. Slice the ripe peaches in half and remove the pits; brush with olive oil.
  4. Prepare the red onion by slicing it thinly.
  5. Crush the almonds in a small pan over medium heat for 4-5 minutes until golden.
Cooking/Assembling
  1. Preheat the grill to medium-high heat (around 375°F or 190°C).
  2. Grill the peach halves cut-side down for 4-5 minutes until grill marks appear.
  3. While peaches grill, toss the mixed greens in a bowl with olive oil, salt, and pepper.
  4. Once grilled, remove peaches from the grill and allow to cool slightly.
  5. Assemble the salad by placing the dressed greens on a plate, topping with peach halves, feta, and almonds.
Serving
  1. Drizzle balsamic glaze over the assembled salad.
  2. Add additional salt and pepper to taste if necessary.
  3. Serve immediately to enjoy the combination of warm and cool elements.
