Preparation
- Gather all ingredients—place them on a clean kitchen counter.
- Wash your mixed greens thoroughly; spin dry to remove excess water.
- Slice the ripe peaches in half and remove the pits; brush with olive oil.
- Prepare the red onion by slicing it thinly.
- Crush the almonds in a small pan over medium heat for 4-5 minutes until golden.
Cooking/Assembling
- Preheat the grill to medium-high heat (around 375°F or 190°C).
- Grill the peach halves cut-side down for 4-5 minutes until grill marks appear.
- While peaches grill, toss the mixed greens in a bowl with olive oil, salt, and pepper.
- Once grilled, remove peaches from the grill and allow to cool slightly.
- Assemble the salad by placing the dressed greens on a plate, topping with peach halves, feta, and almonds.
Serving
- Drizzle balsamic glaze over the assembled salad.
