- In a bowl, combine honey, lime juice, chopped cilantro, minced garlic, olive oil, salt, and pepper.
- Place chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken and let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Cooking
- Preheat your grill to medium-high heat (about 375°F to 450°F or 190°C to 232°C).
- Remove the chicken from the marinade, letting excess drip off. Place chicken on the grill and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
Notes
For an extra flavor boost, add spices like cumin or chili powder to the marinade. If you’re short on time, marinate for just 15 minutes. For juicier chicken, pound the chicken breasts to even thickness. Use a meat thermometer to check for doneness.
