Method
 

Preparation
  1. Preheat your grill to medium-high heat (about 400°F or 200°C).
  2. Husk the fresh corn, removing all silk and debris.
  3. Place the corn directly on the grill. Grill for about 10-15 minutes, turning occasionally, until charred and tender.
  4. Remove the corn from the grill and let it cool for a few minutes.
  5. Once cooled, carefully cut the kernels off the cob into a bowl.
  6. Finely chop the red onion, tomato, cilantro, and jalapeño and add them to the bowl with the corn.
  7. Drizzle with lime juice and sprinkle with salt. Mix gently until everything is well combined.
  8. Let sit for at least 15 minutes before serving to allow flavors to meld.

Notes

Grill the corn until charred for a richer flavor. Chill the salsa for an hour before serving for enhanced flavors. Use fresh herbs like parsley if you’re not a fan of cilantro.
