- Preheat your grill to medium-high heat (about 400°F or 200°C).
- Husk the fresh corn, removing all silk and debris.
- Place the corn directly on the grill. Grill for about 10-15 minutes, turning occasionally, until charred and tender.
- Remove the corn from the grill and let it cool for a few minutes.
- Once cooled, carefully cut the kernels off the cob into a bowl.
- Finely chop the red onion, tomato, cilantro, and jalapeño and add them to the bowl with the corn.
- Drizzle with lime juice and sprinkle with salt. Mix gently until everything is well combined.
- Let sit for at least 15 minutes before serving to allow flavors to meld.
Notes
Grill the corn until charred for a richer flavor. Chill the salsa for an hour before serving for enhanced flavors. Use fresh herbs like parsley if you’re not a fan of cilantro.
