For the Skewers

Method
 

Preparation
  1. Prepare the marinade by adding all marinade ingredients to a medium bowl and whisking to combine.
  2. Marinate the chicken by placing chopped chicken into a large mixing bowl and pouring the marinade over the meat. Stir to combine, cover, and refrigerate overnight, stirring once or twice.
Cooking
  1. Skewer the ingredients by alternating marinated chicken and sliced vegetables on skewers.
  2. Grill the skewers over medium-high heat for about 10 minutes, rotating every 2-3 minutes for even grilling.
Serving
  1. Remove the kebobs from the grill and let them rest for at least 5 minutes before serving.
  2. Garnish with parsley and serve.
