Preparation
- In a bowl, combine olive oil, lime juice, and your preferred fajita spices. Add the chicken breast and let it marinate for at least 15 minutes.
- Preheat your grill to medium-high heat (around 375°F or 190°C).
Grilling
- Once the grill is hot, place the marinated chicken on it. Grill for about 6-7 minutes on each side, until fully cooked and reaches an internal temperature of 165°F (75°C).
- While the chicken is cooking, slice the bell peppers and red onion. Grill these for about 5-6 minutes until they are slightly charred and tender.
Assembly
- In a large bowl, add chopped lettuce, grilled chicken slices, grilled veggies, diced avocado, and chopped cilantro.
- Drizzle with olive oil and an extra squeeze of lime juice. Toss gently to combine.
- Enjoy immediately, or chill for later!
Notes
For best results, let the chicken rest for 5 minutes before slicing to retain juices. Marinate the chicken overnight for added flavor. Use avocado oil for grilling for a higher smoke point. Mix in some black beans for extra protein and fiber.
