Preparation
  1. In a bowl, combine olive oil, lime juice, and your preferred fajita spices. Add the chicken breast and let it marinate for at least 15 minutes.
  2. Preheat your grill to medium-high heat (around 375°F or 190°C).
Grilling
  1. Once the grill is hot, place the marinated chicken on it. Grill for about 6-7 minutes on each side, until fully cooked and reaches an internal temperature of 165°F (75°C).
  2. While the chicken is cooking, slice the bell peppers and red onion. Grill these for about 5-6 minutes until they are slightly charred and tender.
Assembly
  1. In a large bowl, add chopped lettuce, grilled chicken slices, grilled veggies, diced avocado, and chopped cilantro.
  2. Drizzle with olive oil and an extra squeeze of lime juice. Toss gently to combine.
  3. Enjoy immediately, or chill for later!

Notes

For best results, let the chicken rest for 5 minutes before slicing to retain juices. Marinate the chicken overnight for added flavor. Use avocado oil for grilling for a higher smoke point. Mix in some black beans for extra protein and fiber.
