Preparation
  1. Whisk together olive oil, white balsamic vinegar, salt, and pepper in a mixing bowl until well blended.
  2. In a large bowl, mix the diced avocado, mango, sliced grilled chicken, and diced red onion until well combined.
  3. Fill a large salad platter with baby red butter lettuce or divide the greens into four small dishes.
  4. Spoon the chicken, avocado, and mango mixture over the greens and drizzle half of the dressing on top.
  5. Serve the salad with the remaining dressing on the side for guests to add as desired.
