For the Topping

  • 2 tablespoons balsamic glaze Provides a tangy sweetness and beautiful finish.

Method
 

Preparation
  1. In a medium mixing bowl, add cherry tomatoes and fresh basil; toss until well combined. Set aside.
  2. Preheat the grill to medium-high (approximately 375 degrees F).
  3. Slice the baguette on the bias into 1-inch thick slices.
Grilling
  1. Brush both sides of the baguette slices with olive oil.
  2. Brush the tops of the slices with balsamic glaze.
  3. Sprinkle the tops with kosher salt and black pepper.
  4. Top each slice with a piece of fresh mozzarella.
  5. Grill the slices for 3-4 minutes, or until the mozzarella mostly melts.
  6. Remove the slices from the grill and top with the tomato-basil mixture.
Serving
  1. Serve the crostini warm or at room temperature.

Notes

For best results, let mozzarella come to room temperature before grilling. Serve immediately for optimal texture or allow resting for flavor development. Leftover ingredients can be used in wraps, bowls, or sandwiches.
