Preparation
- In a bowl, mix chopped red onion, olive oil, balsamic vinegar, kosher salt, and fresh cracked pepper for the bruschetta mixture. Set aside.
- Chop the medium vine ripe tomatoes and add to another bowl with minced garlic and fresh basil. Mix with the onion-balsamic mixture, and add salt and pepper to taste.
- Let the bruschetta sit for at least 10 minutes or overnight to meld flavors. Toss in diced mozzarella just before serving.
- Season the chicken by sprinkling salt and pepper over the cutlets.
Cooking
- Preheat the grill to medium-high heat, clean and oil the grates.
- Grill the chicken cutlets for about 2 minutes on each side until fully cooked and grill marks appear.
- Transfer the grilled chicken to a platter and generously top with the bruschetta mixture before serving.
Notes
For best results, consider marinating the chicken prior to grilling. Serve with a light salad or crusty bread to soak up the bruschetta juices.
