Bruschetta Topping
  • 2 medium medium vine ripe tomatoes Provides fresh, juicy flavor.
  • 2 cloves garlic Adds aromatic quality.

  • 1/4 cup fresh basil leaves Brings herbaceous brightness.
  • 2 tablespoons extra virgin olive oil Provides richness.
  • 1 tablespoon balsamic vinegar Adds tangy depth.
  • 1 teaspoon Kosher salt Essential for flavor.
  • 1/4 teaspoon fresh cracked pepper Adds heat.
  • 1 cup part skim mozzarella Offers creaminess (omit for Whole30, Paleo).
Chicken
  • 1 pound thin sliced chicken cutlets Main protein for the dish.

Method
 

Preparation
  1. In a bowl, mix chopped red onion, olive oil, balsamic vinegar, kosher salt, and fresh cracked pepper for the bruschetta mixture. Set aside.
  2. Chop the medium vine ripe tomatoes and add to another bowl with minced garlic and fresh basil. Mix with the onion-balsamic mixture, and add salt and pepper to taste.
  3. Let the bruschetta sit for at least 10 minutes or overnight to meld flavors. Toss in diced mozzarella just before serving.
  4. Season the chicken by sprinkling salt and pepper over the cutlets.
Cooking
  1. Preheat the grill to medium-high heat, clean and oil the grates.
  2. Grill the chicken cutlets for about 2 minutes on each side until fully cooked and grill marks appear.
  3. Transfer the grilled chicken to a platter and generously top with the bruschetta mixture before serving.

Notes

For best results, consider marinating the chicken prior to grilling. Serve with a light salad or crusty bread to soak up the bruschetta juices.
