Preparation
- Preheat the oven to 170-180°F (75-80°C) to dry out the lime zest.
- Zest the lime and spread it on a plate.
- Bake the zest for 15-20 minutes until dried.
- Once cooled, crumble the zest finely.
Cooking
- In a bowl or jar, mix the dried lime zest with all other seasoning ingredients, adding salt and pepper to taste.
- Blend the seasoning mixture with olive oil, orange juice, lime juice, lemon juice, and soy sauce.
Serving
- Place a 2-3 pound flank or skirt steak (or equivalent chicken) into a gallon ziplock bag or 9x13 casserole dish and pour the marinade over it.
- Refrigerate the meat and let it marinate for up to 24 hours.
- Grill the marinated meat until desired doneness is achieved.
Notes
This seasoning is perfect for meal prepping and can be stored in the refrigerator for up to a week. Can also be frozen for longer storage.
