Ingredients
  

Marinade Ingredients
  • 2 tablespoons lime zest Freshly grated
  • 1/2 cup olive oil For richness and moisture
  • 1/4 cup orange juice Adds sweetness and acidity
  • 1/4 cup lime juice Boosts brightness and acidity
  • 1/4 cup lemon juice Adds citrusy tang
  • 1/4 cup soy sauce Introduces umami depth
  • 1/2 cup cilantro leaves and stems Aromatic herbal element
  • 1 teaspoon salt To enhance all flavors
  • 1 teaspoon black pepper To taste

Method
 

Preparation
  1. Preheat the oven to 170-180°F (75-80°C) to dry out the lime zest.
  2. Zest the lime and spread it on a plate.
  3. Bake the zest for 15-20 minutes until dried.
  4. Once cooled, crumble the zest finely.
Cooking
  1. In a bowl or jar, mix the dried lime zest with all other seasoning ingredients, adding salt and pepper to taste.
  2. Blend the seasoning mixture with olive oil, orange juice, lime juice, lemon juice, and soy sauce.
Serving
  1. Place a 2-3 pound flank or skirt steak (or equivalent chicken) into a gallon ziplock bag or 9x13 casserole dish and pour the marinade over it.
  2. Refrigerate the meat and let it marinate for up to 24 hours.
  3. Grill the marinated meat until desired doneness is achieved.

Notes

This seasoning is perfect for meal prepping and can be stored in the refrigerator for up to a week. Can also be frozen for longer storage.
