Ingredients

Dry Rub Ingredients
  • 2 tablespoons light brown sugar Adds sweetness and helps create a caramelized crust on the chicken.
  • 1 tablespoon kosher salt Enhances the overall flavor and helps tenderize the meat.
  • 1 teaspoon garlic powder Provides rich umami and savory notes.
  • 1 teaspoon onion powder Adds depth and sweetness to the dry rub.
  • 1 teaspoon smoked paprika Imparts a smoky flavor, enhancing the grilled taste.
  • 1 teaspoon freshly ground black pepper Introduces heat and flavor to the seasoning blend.
  • 1/2 teaspoon chili powder or cayenne pepper Optional spice for those who enjoy an extra kick.
Main Ingredients
  • 2 pounds chicken legs The main protein, known for their rich flavor and juicy texture.
  • 1 cup BBQ sauce The sticky glaze that coats the chicken, adding sweetness and tang.
  • 1/4 cup apricot jam or apple/grape jelly Combines with BBQ sauce for a sweet, fruity note.

Method

Preparation
  1. Make the dry rub: In a small bowl, combine all the dry rub ingredients and mix them lightly.
  2. Prepare the chicken: Pat chicken drumsticks dry and rub the dry rub evenly onto them. Cover and refrigerate for 1-2 hours, or overnight. Remove 30 minutes before grilling.
  3. Prepare the BBQ sauce: In a saucepan, combine BBQ sauce and jam, and heat over medium-low until thickened.
Cooking
  1. Preheat the grill: Preheat the grill and oil the grates. Grill chicken on medium heat for 5 minutes, flip, and adjust pieces for even cooking.
  2. Baste the chicken: Start basting with BBQ sauce when chicken is 80% done and cook for 2 more minutes, flipping and basting the other side. Ensure the internal temperature reaches 165°F.
Serving
  1. Let the chicken rest for 5-10 minutes before serving, garnishing if desired.

Notes

Let the chicken marinate overnight for deeper flavor. Use a meat thermometer for perfectly cooked chicken. Experiment with your favorite BBQ sauce for a personalized touch.
