Preparation
- Make the marinade by whisking together the olive oil, balsamic vinegar, Dijon mustard, optional honey, garlic, oregano, thyme, salt, and pepper.
- Pound the chicken breasts to 1/2 inch thick for even cooking.
- Reserve 2-3 tablespoons of the marinade and pour the remainder over the chicken, massaging it in. Allow to marinate for at least 30 minutes, preferably 2-4 hours.
Cooking
- Preheat the grill to medium-high (400°F-450°F) and let the chicken come to room temperature.
- Place the chicken smooth side down on the grill and cook for about 5 minutes per side with the lid closed.
- In the last minute of cooking, brush the chicken with the reserved marinade.
Serving
- Remove the chicken from the grill when it reaches just under 165°F.
- Allow the chicken to rest for 5 minutes before slicing and serving.
Notes
Marinate longer for deeper flavor infusion. Use fresh herbs when available for enhanced flavor. Let chicken rest after grilling for improved juiciness.
