Method
 

Preparation
  1. Make the marinade by whisking together the olive oil, balsamic vinegar, Dijon mustard, optional honey, garlic, oregano, thyme, salt, and pepper.
  2. Pound the chicken breasts to 1/2 inch thick for even cooking.
  3. Reserve 2-3 tablespoons of the marinade and pour the remainder over the chicken, massaging it in. Allow to marinate for at least 30 minutes, preferably 2-4 hours.
Cooking
  1. Preheat the grill to medium-high (400°F-450°F) and let the chicken come to room temperature.
  2. Place the chicken smooth side down on the grill and cook for about 5 minutes per side with the lid closed.
  3. In the last minute of cooking, brush the chicken with the reserved marinade.
Serving
  1. Remove the chicken from the grill when it reaches just under 165°F.
  2. Allow the chicken to rest for 5 minutes before slicing and serving.

Notes

Marinate longer for deeper flavor infusion. Use fresh herbs when available for enhanced flavor. Let chicken rest after grilling for improved juiciness.
