Preparation
- In a mixing bowl, whisk together the yogurt, lemon juice, lemon zest, garlic, paprika, cumin, onion powder, salt, pepper, and cilantro.
- Pat the chicken breasts dry with a paper towel to remove excess moisture.
- Place the chicken in a gallon-size resealable bag and pour the yogurt marinade over it.
- Press out any excess air and seal the bag carefully. Rub the chicken breasts to ensure they are well coated.
- Let it marinate for at least 45 minutes or up to 24 hours for deeper flavors.
Cooking
- Preheat the grill or oven to 425°F (medium-high heat).
- For outdoor grilling, cook the chicken for 5 to 7 minutes per side until the thickest part reaches 165°F.
- For oven baking, place chicken on a lined baking sheet and bake for 20-25 minutes.
- Once cooked, transfer the chicken to a plate and let it rest for 5 minutes before slicing or serving.
Notes
Marinate overnight for the best flavor infusion. Ensure the chicken is patted dry before applying the marinade for better adhesion.
