Preparation
  1. Heat the olive oil in a deep pan over medium-high heat.
  2. Add the chicken breast in a single layer and season with salt, pepper, and garlic powder. Cook until golden and cooked through.
  3. Pour in the chicken broth/stock to deglaze the pan, scraping up any browned bits.
  4. Stir in the gnocchi and cook for 3-4 minutes, stirring frequently.
  5. Reduce heat to very low while cooking, adding extra broth if it seems too dry.
  6. In a small bowl, whisk together the eggs, Parmesan cheese, salt, and pepper.
  7. Slowly pour the egg mixture over the gnocchi, stirring continuously until a creamy sauce is formed.
  8. Remove from heat, sprinkle with more Parmesan, and serve immediately. Store leftovers in an airtight container in the fridge for up to 3 days.

Notes

Check doneness of chicken (165°F) and adjust creaminess as needed. Use fresh ingredients and mix well to avoid issues.
