Preparation
- Preheat the oven to 350°F (180°C) and line an 8x8 inch pan with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, ground ginger, cinnamon, nutmeg, ground cloves, and salt. Set aside.
- In another bowl, whisk together the brown sugar, granulated sugar, eggs, molasses, and vanilla extract until smooth. Set aside.
Cooking
- In a large bowl, melt the butter and chopped dark chocolate together. Let it cool slightly.
- Whisk the molasses mixture into the melted chocolate mixture until well integrated.
- Fold in the flour mixture until just combined, then gently fold in the chocolate chips if using.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 35-40 minutes or until a toothpick inserted comes out with a few damp crumbs attached.
Serving
- Let the brownies cool completely in the pan before slicing into squares.
Notes
For best results, use high-quality dark chocolate. Allow brownies to cool completely for cleaner slices. For extra spice, consider adding a pinch of cayenne or black pepper. Top with whipped cream or vanilla ice cream for serving.
