Preparation
- Preheat the oven to 350 degrees F and line baking sheets with parchment paper.
- In a small bowl, whisk together all-purpose flour, baking powder, baking soda, and kosher salt.
Mixing
- In a mixing bowl, beat cream cheese and granulated sugar until smooth and well combined for about 3 minutes.
- Mix in melted butter, vegetable oil, egg, milk, and cake batter flavor extract until thoroughly mixed.
- Gradually add the dry ingredient mixture until just combined, avoiding overmixing.
- Fold in Funfetti morsels and rainbow sprinkles until evenly distributed.
Baking
- Using a cookie scoop or tablespoon, place rounded dough onto prepared sheets about an inch apart.
- Bake for 9-11 minutes or until the edges turn slightly golden but the centers remain soft.
- Allow cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
Notes
Use room temperature cream cheese for a smoother batter. Chill the dough for 30 minutes for thicker cookies that hold shape better. Store cookies in an airtight container at room temperature for up to a week.
