Preparation
  1. Rinse and hull the strawberries, then chop them into halves or quarters.
  2. In a medium saucepan, combine the chopped strawberries, sugar, lemon juice, and water.
Cooking
  1. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle boil (about 5 minutes).
  2. Reduce the heat and let it simmer for another 10 minutes, or until the sauce thickens slightly.
Finishing
  1. Remove from heat and stir in the vanilla extract.
  2. Let the sauce cool to room temperature before serving or storing.

Notes

For a smoother sauce, puree the strawberry mixture with an immersion blender. You can substitute sugar with honey or maple syrup for a natural sweetener. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
