Method
 

Preparation
  1. To the bowl of a stand mixer, add warm water, instant dry yeast, granulated sugar, olive oil, salt, and all-purpose flour.
  2. Knead on low speed until combined, then increase to medium speed and knead until a smooth dough forms and pulls away from the bowl, about 6-8 minutes.
  3. Place the dough in an oiled bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
Shaping and Second Rise
  1. Punch down the dough, transfer it to the counter, and divide it into 12 equal pieces. Pinch the edges into the center and roll each into a tight ball.
  2. Place the dough balls on a parchment-lined baking sheet, cover with plastic wrap or a damp towel, and let them rise until puffy, about 30 minutes.
Baking
  1. Preheat the oven to 400°F.
  2. In a small bowl, mix together the egg and water. Brush the egg wash over the dough balls.
  3. If desired, score each ball with deep slashes using a sharp knife.
  4. Place the rolls on the center rack and add ice cubes to the bottom of the oven. Bake for 18-20 minutes until golden brown.
  5. Remove from the oven and brush with melted butter before serving.

Notes

For best results, allow the dough to rise in the fridge overnight for an extra flavor boost. Always check your yeast’s expiration date, use a thermometer for warm water, and consider adding herbs or garlic powder for flavor variations.
